Every evening (by reservation), come and sit down to enjoy a generous meal, prepared with passion using the finest produce from our local producers. It's the perfect opportunity to chat and recharge your batteries.

After 24 years of marriage, we shared a common dream: to take over a guesthouse. It was time to take the plunge for this new adventure! Originally from Moselle, it was ultimately the charm of Occitanie that won us over. We settled in the pretty village of Argeliers, in the heart of Aude, seduced by this magnificent winemaker's building. From the first glance, we knew that Le Colibri Bleu would be the ideal place to realize our life project. A Taste for Sharing and Hospitality This change of direction is actually a nod to our past. Even if we didn't practice the same profession, we were both immersed in the world of catering and hospitality. A passion for service and gastronomy that we are delighted to share with you today. Our Journeys... and an Encounter: Nathalie: The Traveling Spirit of Service I began my career as a waitress at only 16 years old. My desire to enrich my knowledge then took me abroad (Germany, Luxembourg) to perfect my skills in hospitality, bar and service, as well as to acquire the luxury of speaking German and Luxembourgish. Hospitality is my second nature! Sébastien: The Swiss Army Knife of Gastronomy My journey began on the benches of hotel school, crowned by a professional cooking baccalaureate. It was during my first job in France that I had the chance to cross paths with Nathalie! My adventure then continued in Luxembourg, allowing me to explore and master various fields: from classic catering to home cooking, including catering and butchery. These experiences are now at the service of our table d’hôtes! Today, we are pooling all this expertise to make Colibri Bleu your place of renewal. We look forward to welcoming you and telling you more stories over a good meal!
